Warm Quinoa Salad



This recipe is perfect in the colder weather because it is warm and satisfying, but also gives you plenty of nutrients and energy. This warm salad can be a side dish on the table or the main star by adding different proteins such as chicken, steak, or an over-easy egg. Because you can subscribe and receive this mix weekly...this recipe seems like a no brainer. Ingredients:

  • 2 cups (3oz) BMG nutrition mix

  • 1 small onion

  • 2 medium sweet potatoes

  • 1 cup quinoa

the basics:

  • Olive oil

  • Butter

  • Salt & pepper

  • Seasoning of your choice (I use Trader Joe's 21 seasoning salute, oregano, and garlic powder)

Instructions:

  • Dice onions and add to a saute pan, cover with olive oil and salt and cook over low heat until slightly transparent

  • In separate pot, cook quinoa according to instructions

  • Remove onions from pan and place in medium-sized mixing bowl

  • Peel (to your liking) and chop sweet potatoes, add them to the skillet with butter, salt, choice seasonings, and ¾ cup of water. Cover and cook over medium-low heat until tender

  • Drain excess water from sweet potatoes and turn heat to medium-high

  • roughly chop nutrition mix and add to skillet with sweet potatoes until slightly wilted.

  • Add onions back into pan and add salt & pepper to taste

  • Combine skillet mixture and quinoa in a medium mixing bowl and toss lightly. Add fresh nutrition mix and/or a protein of your choice
